If it ain’t broke, don’t fix it. Bullock’s Bistro is perhaps the best-known restaurant north of 60 in Canada, and for good reason: the local fish and hand-cut chips are legendary, and the secret sauces inimitable. The atmosphere is cozy and made all the more warm by the loving messages, postcards, clippings and curios that cover almost every surface of the old log cabin it’s stationed in.

Earlier this year, founders Renata and Sam Bullock sold the restaurant to Jo-Ann Martin and Mark Elson—but the new owners aren’t looking to change a thing. “It’s got its own life in here,” says Jo-Ann. “It’s a living thing.” They’re just taking care of it.
